Crabbit Cakes

Ingredients
1 lb. shredded, deboned rabbit
4 tbsp. mayonnaise
2 tsp. Old Bay
2 tsp. dried parsley
1 tsp. yellow mustard
2 slices bread, crusts removed and broken into small pieces
2 eggs
2 tbsp. oil, for frying
Directions
Combine the mayonnaise, Old Bay, dried parsley, yellow mustard, and eggs.
Add the shredded, deboned rabbit and bread pieces.
Mix to combine well.
Using your hands, portion the mixture into 6 to 8 equal sizes and form into patties.
In a medium sized frying pan, gently heat oil.
When oil is hot, place half of the patties in the skillet and fry on each side until golden brown. Fry the remaining patties.
Serve hot with tartar sauce and your favorite side!
