Crabbit Cakes

Prep time: 10 min Cooking time: 20 minutes Serves: 4

Ingredients

  • 1 lb. shredded, deboned rabbit

  • 4 tbsp. mayonnaise

  • 2 tsp. Old Bay

  • 2 tsp. dried parsley

  • 1 tsp. yellow mustard

  • 2 slices bread, crusts removed and broken into small pieces

  • 2 eggs

  • 2 tbsp. oil, for frying

Directions

  • Combine the mayonnaise, Old Bay, dried parsley, yellow mustard, and eggs.

  • Add the shredded, deboned rabbit and bread pieces.

  • Mix to combine well.

  • Using your hands, portion the mixture into 6 to 8 equal sizes and form into patties.

  • In a medium sized frying pan, gently heat oil.

  • When oil is hot, place half of the patties in the skillet and fry on each side until golden brown. Fry the remaining patties.

  • Serve hot with tartar sauce and your favorite side!
